Chocolate (Tofu) Mousse with Berries (Gluten-Free)

This rich, creamy dessert tastes remarkably like real chocolate mousse, but it’s much lower in fat and since it’s made with tofu, it contains no animal fat. The raspberries add fiber along with a nice tartness to cut the richness of the mousse. Mori-Nu Silken Tofu is now available in a new “Lite” version. It does not require refrigeration, so you can keep a supply in your cupboard, allowing you to create a “gourmet” dessert in less than 15 minutes! You might consider layering the mousse in a glass bowl, covered with the raspberry sauce, or layering the mousse with the raspberry sauce in separate parfait glasses.

  • 1/2 cup semi-sweet chocolate chips
  • 4 oz. bittersweet chocolate (Ghirardelli Bittersweet Chocolate 60% cacao recommended)
  • ¼ cup water
  • 2 12-oz. package Silken Tofu Soft
  • ½ cup unsweetened cocoa
  • ½ cup powdered sugar
  • 1 ½ tbsp. vanilla
  • 2 12-oz. bags frozen berries (raspberries, blueberries, blackberries), unsweetened, thawed
  • 4 tbsp. agave syrup (or sugar)
  • Zest of 1 large lime (optional)

Measure the chocolate chips in a 2-cup glass measuring cup. Add the bittersweet chocolate, water and powdered sugar to this cup and microwave on high for 1-3 minutes, checking and stirring frequently to make sure the chips do not burn or boil over. When chocolate is softened, whisk till smooth.

In the meantime, open the tofu package and place tofu in the blender or food processor. Add the cocoa and vanilla. Add the chocolate mixture to the tofu mixture. Blend until smooth and creamy. Store in the refrigerator until ready to serve.

Mix together gently the berries, agave or sugar, and lime zest (optional). Set aside.

Serve a 1/3-cup scoop of the mousse for each person and cover with berries for extra fiber and protective nutrients.

Makes 12 1/3-cup portions. Each portion provides approximately 200 calories, 7 grams protein, 8 grams fat (4 grams sat fat), 0 mg cholesterol, 29 grams carbohydrates, 7 grams fiber, 37 mg sodium, 332 mg potassium, 50 mg calcium.
