Berry Cherry Compote (Gluten-Free)
This easily-prepared dessert features two BIG color fruits rich in protective phytochemicals and fiber, and the potassium helps to control blood pressure. You can either let the frozen fruit thaw slowly in the refrigerator, or you can thaw the fruit in the microwave in a microwave-safe glass bowl.
- 1 lb bag frozen blueberries, thawed
- 1 lb bag frozen cherries, thawed
- Zest of 1 lemon
- Juice of 1 lemon
- 2 tbsp. orange marmalade
Zest the lemon (using a planer). Juice the lemon. Place the marmalade in a small custard-size cup. Add the lemon zest and juice. Heat in microwave until marmalade melts. Whisk lemon and marmalade together. Gently fold this marmalade sauce into the berry-cherry mixture. Stored covered in the refrigerator until serving time.
Makes about 5 cups. Each cup provides about 110 calories, 1g protein, 1g fat (0g sat fat), 0 mg cholesterol, 27g carbohydrate, 4g fiber, 4 mg sodium, 230 mg potassium, 18 mg calcium, and 14 mg magnesium.
